Vegan Chocolate Cake with Vegan chocolate icing

 As I said that I will start posting vegan recipe for people who want to eat Vegan (or Je (เจ) in Thai), and we will start the festival next month.




So it's better to be prepared, and testing recipe before the real time come ^^. Today, it's an easy (or very easy) vegan chocolate that comes with vegan chocolate icing. Both of them contain no egg or animal product, and if you want to go further, you can use rice flour instead of the cake flour for gluten free version too !!!!!
I add banana to make it more interesting, you can use other kinds of fruit like berry (blueberry, strawberry, raspberry or etc), kiwi or anything that you want and you can go for fruit free version, it's still delicious.
As the chocolate icing has oil and water, so it will soft and a bit gooey, so don't be surprised if it won't stay in place, haha.

 Vegan Chocolate Cake with Vegan chocolate icing
Makes 18x9 cm cake


Vegan chocolate cake
45g .................. Rice bran oil
50g .................. Light brown sugar
200ml ............. Soy milk
130g ................ Cake flour
20g .................. Cocoa powder
1 1/2tsp ........... Baking powder

Vegan chocolate icing
190g ................ Icing sugar
15g ................... Cocoa powder
45g ................... Rice bran oil
30g ................... Water

Filling and topping (Optional)
.............................. Banana or other kinds of fruit




Preheat an oven to 170C
Line 18x18cm pan with baking paper.


 I use Rice Bran oil.


 Put rice bran oil, light brown sugar and soy milk into a bowl and mix to combine.


 Sift cake flour, baking powder and cocoa powder into the bowl.


 Mix to combine.


 Pour into the prepared pan.


Bake for 25-30 minutes or until the top spring back when touch lightly.
Remove from the pan, and let it cool completely.


 Making cocoa icing.
Put icing sugar into a bowl, and sift the cocoa powder into the bowl.
Whisk to combine.


 Pour the oil and water into the bowl.


 Mix until fully combine.


 Cut the cake into 2 equal pieces.


 Spread half of the icing over the cake, line the banana over the icing (if using).



 Place another piece of the cake over the banana and spread the rest of the icing on top, decorate with banana.
Cut into pieces before serving.
