Brunch Egg Bake: My kind of Breakfast!

 Breakfast is my favourite meal of the day, it's the time that I can eat as much as I want ^^.
I have a habit of skipping dinner, so I'm always hungry on morning, haha, and it's the reason why breakfast is so important for me. To your understanding, I didn't talk about just one cup of coffee. But when I wake up late, it's not a good idea to have my breakfast at 9.30 and have lunch at 12.00, so brunch is a better choice. 
This egg dish has all the thing you need, with vegetable, cheese and egg you get protein, fibre, fat, carbohydrate and yes, deliciousness, hehe.
If you're hungry, you will finish this dish by yourself, but if not, share it with someone is a good idea for happy morning.




Brunch Egg Bake
Serve 1-2 people, depend on how hungry you are ^^ 


75g ................................... Cheddar cheese, shredded 
75g ................................... Mozzarella cheese, shredded 
15g ................................... Butter
30g ................................... Onion, cut into small pieces
30g ................................... Mushroom, sliced
30g ................................... Bell pepper, cut into small dices
30g ................................... Ham, cut into small pieces
Egg mixture
2 ....................................... Eggs
35g ................................... All purpose flour
100ml ............................... Milk
.......................................... Pinch of thyme, and parsley 
1/8tsp ................................ Salt
.......................................... Pepper, to taste



Preheat an oven to 180C
Have ready 18x12cm dish ( mine is Le Creuset).
Mix both kinds of cheese together.


 Place a pan over medium heat, put the butter into the pan, stir until melt.
Put onion and cook until soften, add mushroom and bell pepper and cook until soften.
Put ham into the pan, stir until combine.
Remove from the heat.
Put all the ingredients for the egg mixture into a bowl.

 Stir until combine.
 Put half of the cheese mixture into the baking pan.
Put the cook vegetable and ham into the baking pan.


 Pour egg mixture into the baking pan.


 Sprinkle the rest of the cheese mixture over the egg mixture.


Bake in the preheated oven for 32-35 minutes.
Serve warm from the oven and enjoy your lovely day.
