Simply daily bake: Strawberry cobbler

 There's a time that I feel like I don't want to move, haha. Actually it comes from the fact that I have too many things to do.

 Well it's not about cooking or baking, I just have too many Animate and manga to watch and read so I don't have time to bake, ^^. But you know me, when I didn't bake I miss it, what can I do?
So rather than baking something complicate simple dessert seen to be great. Fruit Cobbler is biscuit with fruit filling, the top has the same ingredients as the biscuit but it's a dessert in its own, you don't need anything else to serve with (except you need more richness a dollop of whipped cream will be great). It's so easy too make, and it's delicious too. 
There are 2 important points, first for the biscuit, the trick to make it high is here press and fold don't knead it like a bread dough. Second the fruit, because it comes from different place your can be sweeter or more sour, taste it before adding the sugar, you will need more or less depends on your fruit.
Serve this cobbler warm from the oven with a cup of tea,  enjoy your time with great book (Manga for me), and have a happy afternoon ^^.

 Strawberry cobbler
serves  4- 5 

 Filling
270g ............................ Strawberries (trimmed and cut into small pieces)
40-50g ........................ Granulated sugar
2tsp ............................. Cake flour
Biscuits
125g ............................ Cake flour
1 1/4tsp ....................... Baking powder
2tbsp ........................... Granulated sugar
.................................... pinch of salt
40g ............................. Unsalted butter, cold and cut into small cubes
90g ............................. Whipping cream, cold
.................................... Light brown sugar for sprinkle over the biscuits  








Preheat the oven to 190°C
Brush baking cup with butter (if using 8cm you will need 4 of them, and 5 if using 7cm).
Mix all the ingredients for the filling together.
Divide into the prepared cup. 
 Put the flour, sugar, salt and baking powder into a bowl, whisk to combine.
Put the butter into the bowl, use your finger tips, mix the butter into the flour mixture until the mixture resemble breadcrumbs.
Pour the whipping cream into the bowl, use a spatula to press the ingredients together until the dough start to form.
Pour the mixture out of the bowl, press and fold until the dough stick together.
Cut into desired size.
Place the biscuit over the filling, brush with whipping cream and sprinkle with light brown sugar.
Bake for 20 minutes or until the top is brown and the biscuits puff (if the top start to turn brown quickly, cover the top with the aluminium foil after 15 minutes. 
Serve warm.
